He knew his stuff. He was clear in his lectures. The midterms and finals were based on part of the lecture, part book. But the tests were very difficult, a lot of true false. had a heavy curve, so i ended with an A. not a bad class though.
He is very nice and funny, but you can't see any of the slides. It is interesting stuff, but the tests are really confusing. There isn't any work to do and the curve is huge. I got a B and C on the midterm and final and got an A in the class.
He was very knowledgeable on the information and was very funny. I will definately take another of his classes.

He was very knowledgable about the topics. He's funny, and easy to understand. It was a fun and interesting class. He's passionate about the subject, and really cares about other's health. Just watch out on the tests bc there's some tricky true/false q's.

He is very knowledgable and passionate about the subject. He makes the class pretty fun, and includes humorous comics and stories into lectures. Slide shows are a plus because he gives you all the slides and there is no day to day homework. Good class!
He gives you all the lecture notes beforehand. This does not mean you don't have to go to class! He takes attendance sometimes! Also, there are extra-credit opportunities. The midterm and final were surprisingly difficult, so be prepared. Otherwise, pretty easy class:no reading!

MUST GO TO CLASS...but if you go to class, it's pretty easy. Do the extra credit cuz it's also easy. REALLY interesting class though, I really liked it. Ended up with A+
funny guy, definently knows his stuff but questions on midterm and final had almost nothing to do with material in the reader. you have to show up to class every day and take good notes which he makes rather difficult by running over numerous topics at once that are somewhat confusing to begin with.
I have taken two of his classes. His nutrition class was one of the best classes that I have taken in college, but his human physiology class was the hardest. He goes really fast in human physiology and the tests were extremely hard. I'm normally on the deans list, but I didn't even pass physiology.
This class is very informational and he knows everything plus more. The music before class is awesome. His tests are a little harder than i expected, but the class is passable. Nice guy, always trys to make a joke.
I have taken all the classes that Gilbert has to offer. He is an awesome guy, and always willing to help with any questions that you have. Go to class since most of his test material comes from lecture. Do the extra credit and write down what he says and you'll do fine.
Really great class. You have to attend every class to turn in assignments but they are super easy. I never took notes, just kicked back and listened carefully, easy A. Hes a clear speaker and kept the material interesting. My only grips were the cost of the book and his powerpoint slides could use some spicing up. Music before class is great!
his midterm and final questions were way harder than anything we did in class. I can not reccommend Nutrition.

Great professor but the test are really in depth. Would recommend the class if you are looking for a fun class that just takes a little cramming
Ehhhh not a totally bad class, but i definitely took it at 12, so it just made me really hungry but made me feel guilty about EVERYTHING i eat. If you like your diet I would stay away, plus the tests are pretty hard, i changed to pass/no pass
Rudest teacher. Not interested in students and not helpful. Has an obsession with lance armstrong- uses him for every example. when it comes to answering questions about the female body, he doesn't know and doesn't care to find out. Exams are hard. ta's are cool and helpful. take susie ceriale- she's more laid back and somewhat more approachable.
the way the professor portrayed the class...i thought the extra credit would be more of a help. i took this class for fun and it turned out to be the class i did the worst in. it sucked because i dont even know how the final grades were calculated but i felt like i should have had a much higher grade. the class was interesting though.
Class was interesting. I learned alot, but it made me feel guilty about everything I ate. It sort of brain washes you. His tests are pretty hard even though it's multiple choice. He'll ask questions about specifics he says in lecture. So take alot of notes because the slides don't help that much. i changed to pass/no pass.
This guy really grows on you! By the end of the class you can't help but think he's awesome, he's very funny and knows EVERYTHING about the subject. Tests are a bit difficult but nothing unmanageable. Reccommended!

He's kind of a jerk, to be honest. Not overtly, but he comes off as cold. Otherwise, his class was great, very informative, organized, and clearly presented. I definitely learned a lot.
Class is pretty hard.. his midterm and final are tricky but he does offer really easy homework points and extra credit which is always good.. the class is very interesting and i learned a lot so you should go!!!!
he is a clear and informative teacher and the material is interesting however the test are tricky!!!!!!!!! Thay are all multiple choice and true or false but theyare very tricky!!! Don't buy the little nutrition guide book I never even opened it and i could tseel it back however the woorkbook is manditory!!!! You need it!!!!
his tests or tricky instead of testing knowledge of material he tests how well you can take a test.plus he requires you to turn in hw every day in class, therefore you must sit through every boring lecture. bring a good book or sudoku... oh also his class fulfills no requirements.

Great class, funny guy, knows what he's talking about. Not hard, but doesn't fulfill any requirements. Study practice test and turn in daily (very easy) homeworks and you'll do fine.
he reads right off his slides. 70 questions for midterm and final. half true/false and the other half multiple choice. attendance is mandatory because you have to sign in. don't buy the textbook, you're just wasting money since everything he tests you on comes from the slides.
Homework is 30% of your grade, thus attendance is mandatory. Don't worry, they only take a second to complete. In this sense, attendance is mandatory, but falling asleep in class is not. Merely goes over the workbook of powerpoint slides you purchase the first day of class. Midterm and Final are way hard, this class was my lowest grade!!
I was taking this class for fun but i got a C+ in it. It was my lowest score. I went to class every day unlike half the class, and i still got a C+. I got a B on the midterm, did all my homework, and got a C+ on the final, and i ended up with a C+. Makes no sense whatsoever. Studied hard too, but his tests are just 70 trick questions. Learned a lot
test are impossible! 2/3 of the test are true false. He is arrogant and firm in his beliefs. i do not recommend any of his classes, in fact i strongly advocate passing on them. if you want to take nutrition, take it with another professor!

A real hard ass, but he knows the material like no other. His test questions are stupid--part of the T/F will be true and part of it false... Annoying, but if you pay attention in class and study it's not so bad. Don't bother buying the book.

He is a really interesting professor, but classes are mandatory. He offers extra credit and the info is very helpful to real life. I have already lost weight and feel healthier after 10 weeks of his class!!!
If you are interested in the field, his lectures are all very well-organized, detailed and easy to follow. If you go to class & pay attention to the additional information he gives to the slides, you should do fine in the class. the tests can be pretty tricky, so take advantage of the extra credit opportunites.

Art Gilbert is the man. Im surprised with the negative comments. If you have the chance take this class. He knows his stuff and does really well with lectures. TAKE NOTES and pay attention. Study and do the practice tests his questions are tricky so know the material. Taught me a lot, I've improved my eating habits greatly. Inspired by his passion
I've taken ESS 3, 40, 101, and soon 182 with Gilbert. People try to give him a bad wrap for being a "tricky" tester but in my experience, if you attend lecture and review the slides each week, you get a straight A. He often gives opportunities for extra credit, which teachers rarely do. I wish he taught more classes at UCSB!
Excellent lecturer; class material is practical and interesting. If you are interested in keeping your body in tip top shape then you will like this class. Attendance is absolutely necessary as there is no reading in the text book so you cant learn anything from it. The text book sucks, he probably wrote it to finance vacations. He is a great
this professor SUCKS! avoid him at all costs. he knows a lot about physiology but can't teach it to save his life. he always says unnecessary things in lectures that he doesn't test us on. this class should have a section because it gets really confusing sometimes.
Awful class, I am a third year and have taken HARD classes and never received below a b..well there's a first for everything..i took this class and got a c+ the worst part is that i was taking it for fun!!! haha this class is the opposite of fun..dont take it. Monotonous teacher who puts RIDICULOUS questions on the tests!
you have to go to class because you turn something in everyday. He won't tell you this but you don't have to buy the book. Just type the RFCs off a friend's and submit them for the same credit. I didn't pay attention in class but i studied and got an a- in the class. GO TO THE REVIEW SESSIONS. they help to see what he thinks is important.
Awesome professor...dry wit and he really just wants us to have good long lives, which really is dependent on our health, which is what this class is all about. Loved it. Don't but the small book, just buy the one with the RFC's in it. We never even opened the small one even though he kept pushing everyone to buy it.

u can tell gilbert really cares about the material he is teaching. he really believes in it and sometimes people can mistake his genuine passion for the subject to be a little standoffish and cold. take his class seriously and use what u learn in ur everyday life. do the RFCs! dont buy the little green book. we dont use it. hard class but worth it.
This is my second time taking one of Dr. Gilbert's classes. He gets a bad rap for being a HARD prof, but he really knows his stuff. His tests may be tricky, but if you read the book and go to lecture (there is an attendance sheet) you should do well. Go to the optional sections, I know I wish I did!!
I LOVED him, he is a great teacher and knows what he is talking about. He cares a lot about the course and his students!! TAKE HIM he's a hottieee <3
He presents the first lecture, students present the rest. You get into groups and choose a topic and present it to the class. There are quizzes after each lecture. You are required to work 2hrs a week at the wellness and fitness institute and it's fun. On slow days you can just do hw in there. Gilbert is extremely helpful and an AMAZING professor!
Amazing and funny professor. Attendance is mandatory to turn in RFC's but they're really easy to do. He knows a lot about the topic. Very passionate and truly cares about the choices we make. Class Recommended!
Gilbert is an awesome professor. This class can get kinda boring at times, but he really knows a lot about nutrition an health! You have to go to class to turn in RFC's but it's extremely easy. Midterm is easy as long as you study the workbook and read over the notes.
He's an outstanding professor. The lectures were almost always interesting and he could be funny but in a sort of cruel way. Most of the test prep questions can't be found in the textbook alone. Attending lectures and taking vivid notes is helpful. Tests can be a little tricky but the overall class was great.

Best class ever. you'll learn a lot of things about nutrition that will help you in life. topics were very interesting and it made me wanna take his physiology class. i studied hard and got A+.tests can be tricky but if you do extra credit and RFC's you'll be fine.
Great professor, one of the few classes I actually retained knowledge from. Very passionate about his subject, so pretty strict. The large book is necessary for all of the class, the small one he wrote isn't (you NEVER use it). Go to class you'll pass it, takes effort to get an "A" however. I highly recommend the class.
anything on the test is not in the workbook that he assigns, all of his power points are ridiculous and don't match up to the workbook so when one is studying there is no point of reference to the questions. also asks trick questions on midterm and final and hes totally full of himself and thinks hes funny but hes not.
Art Gilbert is a fantastic lecturer. He's hilarious and keeps you engaged in the material. I looked forward to going to every class and never felt bored. He's passionate about the subject and really seems to care about his students' well being.
I expected this class to be so easy but it ended up being a little challenging but very interesting. I loved going to class but had to study hard. Prof Gilbert is very caring and funny. I hope to take more of his classes in the future.
If you want to learn how to eat right, take this class! Prof. Gilbert is hilarious and he makes sure we walk away from class with good practical knowledge about how to eat well. (Those types of questions will be on the tests too). It's not SUPER easy, you need to study and know how to apply the material. I had so much fun in this class. Take it!
I absolutely loved Art Gilbert's Health and Nutrition class, however Physiology was extremely boring. He pretty much just read off the slides so there was no point in going to class other than that he took attendance. There is a ton of memorization which makes the tests difficult. Definitely requires a lot of studying.He does offer extra credit tho
Passionate about health/ nutrition and usually kept lectures interesting. Tests were difficult but I would still recommend this class. Very little other work and useful info for after college.
Very useful class with lots of practical knowledge. Take P/NP tho, I got an B- on midterm, A- on final, only missed 2 RFCs and did all extra credit, got a B-, yes a B-. Tests are hard and unfair and so is final grade.
This class is very interesting, but don't let that fool you. For how much I studied, I deserved the grade i got which was a B+; however the tests were quite challenging. Office hours were inconvenient, so the information in lectures is important. The book is a bunch of printed powerpoints. Attendance is mandatory. Take as P/NP if you can.
Literally the worst class I've ever taken here at UCSB. The professor is unfriendly, rude, and demeaning. He also requires a $90 "reader" that just consists of HIS lecture slides and a few worksheets, in addition to another pointless textbook that isn't even used for the exams. His exam questions are ambiguous and irrelevant to the course.

The class seems easy at first but once the first midterm comes around you realize it's no joke. The tests are extremely difficult and a bit out-of-bounds from what he actually teaches. Lectures were alright, but the tests were too challenging.
Professor Gilbert was amazing! For a topic that can be a bit boring at times, he always kept my interest. He is really funny and you can tell he is a pretty smart guy. The class is not hard; there is only a midterm and a final, with one homework assignment due each class period (they only take 5 seconds to complete). Take this class!!!
prof gilbert makes way too much money off this class. the book, only sold at IV bookstore, is 30 bucks and then you buy another book midway through the quarter. never touched that one though. difficult midterm, slightly easier final, go to class and take GOOD notes. hw due every lecture, unless you want to study and apply yourself, take it P/NP

If you are going to take health and nutrition, take it pass/no pass. Class seems very interesting at the beginning, but the tests are extremely tricky and are nothing like the study guide that he gives you. This class requires a lot of studying and good understanding of the material. Doesn't count as a GE or anything and is a lot of work.

I loved going to this class. The professor is very clear and organized. The stuff I learned is probably the most useful information I have ever been taught. Take this class and pay attention, and not only will your grade improve but so will your overall health.
Excellent information. Engaging professor, material has lifelong use. It's a shame he's going to stop teaching it soon, it's actually a very good class. He does have very hard tests, and he knows his stuff back and forth. If you have some physiology knowledge before coming in to the class it does help in understanding the material.
take ESS 9!!! two unit class, only a final exam and mandatory attendance. the final exam was easier than 7th grade health class, super basic stuff but interesting. art is the man!
Not an easy class but he teaches you things everyone should know. The tests are hard but definitely go to the review sessions. I went to the one for the final and it made a huge difference. He said he's probably not teaching the course after this year so get in while you can!
This class was fairly difficult. GIlbert gives you a lot of interesting facts that are good to use in life, but they won't help at all on the tests. You have homework due in each class, so you actually have to go to almost all of the lectures.
he clearly has not bothered to keep up with research for the past 20 years. many of the things he tells you about nutrition (mainly regarding diet composition, saturated fat, cholesterol, and protein) are WAY out dated and would be laughed at in the current nutritional research field.
Although the class was very difficult to get a high grade in and the tests were impossible, this class will make you be a healthier person no doubtedly and that was his goal.
Professor Gilbert knows the facts like the back of his hand. Truly knowledgeable; great lecturer. He's very direct and has a sarcastic sense of humor (which makes my day), and he gives you all the information you need in order to live a long, healthy life. One of the best lecturers I've had at UCSB! Wish he taught more classes.
If you actually read the book and attend lecture you will do well. Also, the extra credit raises your grade by a whole letter grade and all it requires is for you to get a fitness test done at the fitness institute.
I took this class thinking that it would be an easy A... not so. Gilbert's class revolves around his slideshows that you get bundled up in one fat reader. Truly interesting class but his tests, I felt, were ridiculously confusing. A lot of true-false that will have you second-guessing yourself left and right. With good study habits you'll do well.
Dr. Gilbert is incredibly knowledgable and the information I learned in his class has stuck with me for many years.
