She is really cool and funny. Knows her subject! Easy to gt an A in the class, lots of extra credit. There is a lot of work but it is pretty simple. Just go to class turn in your work and extra credit and you will pass. I really enjoyed this class.
very easy class. one of the very few teachers where you can learn AND have fun. i definately recommend her! You don't need her book either, just her study guide. She gives out a study guide before her quizzes which makes it a lot easier to get an A in the class.
I recommend going to class because otherwise her slides will make no sense. her class is very easy! she goes by points, not percentage. A lot of extra credit. She does give a lot of projects but they are really easy and you learn a lot from them. I recommend her to everyone!

She is GREAT! Not only does she make nutrition easy to understand, she makes it interesting & eye-opening! Only 3 projs, 7 quizzes & NO EXAMS or final. LOTS of extra cred opportunities (which are easy/interesting too). NO BOOK needed! Just had to buy a $30 lect packet. Her personality makes class more interesting & makes you WANT to come to class
Best teacher I have had at CSULB ,and I'm a 5th year! She really understands how students work and teaches to suit that! Interesting projects, great format for lectures (power points with fill ins) and enthusiastic! She even brought in dried fruit and stuff for our class to show us alternatives to fresh fruit! Great teacher and class!
Such a GREAT professor! Amazing personality, sweet and caring. VERY helpful. She truly understands students. We need more professors like her. I learned so much from her and never was bored in class. She is always full of energy and is quite funny during lectures. She is always eager to teach! No finals because we had MANY useful quizzes & projects
She?s absolutely wonderful. She makes class interesting and is very passionate about nutrition. Scantron quiz every other week with helpful study guides and several projects. Very eye opening subject. Lots of extra credit opportunities. No book needed, just a $30 packet.

No finals. Only online quizzes. She's helpful, knows what she's talking about. Just a little crazy and intimidating sometimes. No textbook necessary. I would recommend.
Probably one of the easiest classes you'll ever take. She is knowledgeable but has her biases. She is a bit crazy but deal with it and you'll get the easy A.
really easy class, hardly ever attended class and still got a 98 in the class. just make sure to show up on days when there's in class activities because those are about 50 points. she will let you know in the syllabus when these are. no exams jsut online quizzes that she gves u 2 chances to take
She is amazing! She's so much fun and she really cares about the students and their understanding of the subject. There are many extra-credit opportunities, and there is no such thing as busy-work or a pointless assignment in her class. Oh! And class is NEVER boring!

Easy class. Don't buy the book but buy the studyguide. The material is interesting. Stay on top of your BB discussions and the WABITT discussions on BB and you'll be fine. The tests are online, 7 of them. It's an easy class so long as you do all the work on BB that she puts up there.
EASY A!! Attendance not mandatory, but go to class on days of in-class activities (on syllabus). No tests and points are based on online quizzes, discussion posts on BB, and easy projects. There are EC opportunities if you miss a quiz. Very helpful but intimidating, I prefer emailing her questions. Don't buy the textbook, buy the study guide.
very easy A! but the study guide not the book! she is really outspoken and can come off mean but she doesn't realize it. She really cares about your health and nutrition and will help you, all you have to do is ask!

Her classroom is run as student-based teaching. You teach her and yourself, its great! No tests, only online quizzes which come from the notes in the study guide (so attend lecture even though its not mandatory). Lots of extra credit opportunities. Do the all the work and its an easy A!
Easy A! Loved this teacher and her class. She actually makes learning about nutrition fun. The only thing you have to remember is to do the Discussions online which can be hard to continuously do, but other than that, easy A!
This teacher claims to have a student centered learning class but when it comes to discussions she is not down to listen to a fair argument. Her class doesn't make any sense and the Beachboard activities are crazy. The most disorganized class I've ever taken. Might be an easy A but it's not worth the headache.

Great professor. She is pretty clear and the class is easy if you just follow directions and complete assignments on time. There are no tests and no final; only a few online quizzes. Lots of extra credit also.
Carson is very straight forward. Everything is laid out perfectly, you just need to do the work. No textbook, but you need to buy her study guide. Easy online quizzes, no final, minimal homework, and beachboard assignments. If you don't get an A in this class it's because you didn't put in any effort.
Eh, not sure why everyone loves her so much. She's very energetic and the class is extremely easy (if you don't get an A, it's not her fault). But if you're passionate about nutrition and you want to learn specifics, I wouldn't recommend her. I don't remember anything from any of her lectures and the semster's not even over yet. Easy class though.
Do not take Prof Carson. She is an unpredictable and unprofessional teacher who has severe mood swings. She rushes through lectures and doesn't care if you got all of the words down from a slide. Also, there is way too much busy work. She doesn't explain things enough and is just impossible to deal with. Really, do not take her.

Dr. Carson is so funny and very passionate about nutrition! Most of the assignments are online through beachboard so stay updated with the due dates. Although it was a night class, she made it very exciting and energetic! Dont buy the textbook but the study guide is required. My favorite class by far! Would take her all over again.
She offers a lot of extra credit. Very helpful and knowledgable, sometimes crazy. You might lose some points in the discussion boards, but other than that, it's an easy A.
This professor is very rude,she is of no use if you ask her to clarify on an assignment. She also talked about drinking every time we were in class which is completely unprofessional. Assignments are okay, just stay quiet and try to understand because she really likes to hear herself talk, and if you end up needing help find a peer instead of her.
To the person below me, are you in my class? I have the same problem right now. I asked her about an assignment and she responded back so rude. I've never had that kind of response from a teacher. It's the same when we have discussions in class, she claims she is open to other people's thoughts, but responds so rude.
I was so excited to take this class but Dr. Carson is extremely rude. At first I thought she was just sarcastic but now I don't even want to show up to class bc of the lack of respect she shows her students. She acts like she doesn't want to be there, mopes around, and if you ask for help she'll basically tell you how stupid you are. Don't take her
She's incredibly rude. She's condescending & makes you feel so stupid. She expects you to know answers to everything. You never know what to expect from her. I thought she would be nice but now I know how mean & disrespectful she really is. I hate going to this class because I don't want to deal with her. Thank God it's easy & only once a week.
I can see why people wouldn't like her. Just don't get on her bad side and it'll be fine. Participate in class or do a special project. One time I saw her yell at people for leaving to go to the bathroom, so don't go to the bathroom until break. Other than this, easy A. Just stay quiet and turn everything in on time.

I really enjoyed this class. I learned a lot about my health & great tips on how I can change my diet through the discussion boards. Carson can be moody at times,but if you ask nicely she will explain. Easy A w/ very litle effort! Her assignments may seem tedious, but you learn a lot about yourself by doing the work. :) Strongly recommend!
This was not a helpful professor. She was rude most of the time, to the point that people didn't come to class or want to participate. Her professionalism is questionable. The class and subject is fairly easy and informative, but I recommend taking it with a different teacher.
Can be kind of blunt and sarcastic at times, but don't take that personally. Just stay on her good side and you'll earn her respect. I enjoyed the class because the lectures quizzes, and projects were easy and outgoing. She gives out extra credit so don't miss out on the opportunities.
Class is mandatory for notes for quizzes. all open book on beach board. A lot of small activities. Teacher is fun and chill but will kick you out if on cell phone. Very interesting class.

Not required to come to class but if you miss a day and ask her a question she'll yell at you for not knowing since we went over it in class. Just no.
Although the lectures were pretty clear, she's very disrespectful to all her students and has a bad temper. It's like she's having a bad day every day. Also, when students would ask her to clarify something, she would often ignore them or ridicule them for asking. I often left her class angry andor stressed out.

You take your final with a partner. 2 days of discussion questions you have to post online and you have to reply to 3 responses each day. Make sure you keep a planner to keep up with the assignments. She's very clear on what she wants, but you'll have to do work in this class. Lots of interesting things & I didn't buy a textbook did fine wnotes.
Her class was interesting and fairly easy. All of her quizzes are online and you take the final with a partner. She also offers A LOT of extra credit. When it comes to WABTTT (her assigned project) I would suggest doing a canned food drive. It's really easy and she's very passionate about feeding the hungry. Overall it was a good class.
Rude teacher. This class is based on her opinions only. If you have a different set of opinions, if you like pepperoni pizza don't take this class. Took this class my first semester and it traumatized me.
She is very rude and opinionated. Not the most helpful teacher, but all quizzes are online and "projects" are very simple. This class is easy to pass without going to class except for a few certain projects, but the teacher is just ridiculous and makes you feel stupid for asking questions
She's very temperamental and has no concept of boundaries. Either you get along with her or you don't. It's easy to get on her good side if you participate, but if you say something that she doesn't find interesting, she'll just stare at you like you're stupid. She makes you buy her study guide from copy co. It's like $42 or something.
I found Carson to be a very difficult professor to deal with. She doesn't take things from students. She's strict and by the book, doesn't care if you're having problems. Very matter of fact and not lenient. Gives some extra credit but doesn't help much. She's a little pushy. If you want someone laid back, don't take her. If not, good luck!

Probably the worst class I've taken at CSULB so far. Her attitude is awful, she is very discouraging, and so incredibly rude. She belittles everything anyone tries to say. Would not recommend unless you like negative personality types.
Ms. Carson is hot and cold all the time. Everyday is like walking on eggshells. She is really tough to understand and has a lack of instructions, she expects you to just read her mind, at least it seems like it. The worst teacher everExtremely bipolar. The class is easy all online assignments come to class for the in class projects and you're good. Why take a class to just have negative energy constantly around you. During the final she had the nerve to say I wasn't who I was when I showed her my I.d she thinks she knows everything. She doesn't.
She's actually an easy professor. Passed her class with an A without the huge amounts of extra credit she gives out. Just do what she asks and show up for class.

Also very ethnocentric, not understanding of others, very narrow minded (in the mindset that everyone is an upper middle class student without work). Feels the need to butt in to people's lifestyles and question it. Tough and picky grader. Way too much work, super confusing syllabus.

Extremely Rude, harsh and over complicates a simple subject. She denied my drop class form, I had to go directly to the dean of the FCS department.
ONLINE- fair share of HW but easy. HW is worth more than tests by far: I got high A's on all the HW, and C's on each test but still got a safe A. Tests are open book but the questions are very specific. Just do well on the HW and do not fail the tests and you should get an A. Make sure to read directions for assignments carefully.
She's rude and such, but that never really bothered me. You don't really have to show up, just make sure you're diligent about checking the online quizzes and whatnot for when they are due. It's a good class if you want an easy A, but I wouldn't recommend it if you're easily offended or want a nice professor.
Dr. Carson does not teach in class. Basically all of the assignments that you do are based off of information that you gather through doing the Connect LearnSmart assignments, leaving you little to no information to work with. It's difficult to complete the multiple Diet Analysis projects that are assigned throughout the semester because of this.
Worse teacher ever. Too much homework like this class was my only class. assigns over 100 problems of homework each week, 4 diet analysis that require 2-4 pages. A 300 word forum each week with two 200 word responses. This cclass was just too much and the content was easy but she made it more difficult
She is a very rude female . She is crazy avoid at at all cost. She makes the material so hard, she sketchy, shouts, makes alot of students uncomfortable.
She is very good person, she helped me a lot when i felt helpless. she taught me how to get a good grade without doing too much work, which was really helpful. i strongly suggest to choose her class and also talk with her when you do not know what to do.
Nutrition is suppose to be easy but with her, I felt like I was taking a hard class but she is understanding at times if you talk to her but not usually. Good luck if you get her!
Super easy teacher, she even brings snacks for her students sometimes to show them healthy alternatives to snacking. She is upbeat and fun, at first it was hard for me to warm up to her but she really cares about her student (she even made a guy start drinking water instead of soda daily!!).
By far the worst professor Ive had. Extremely rude and intimidating. Do NOT ask questions or you will be berated. The class itself is not too hard, but it is a lot of busy work for a 100 level class, and just not worth how rude she is. Material is interesting, but with different professor. I cannot express it enough, avoid her class at all costs.
She is awesome! She is really straightforward. Grades quick and is very responsive. She will reply fast. She is clear on what is going on in the class. You do have to put in the work if you want an A though (it's not a heavy amount of work in my opinion). Weekly DB, a few exams, and weekly online homework. She offers extra credit too.
This course was super easy! It was my first online class and i loved it. She always posted what assignments were to be due at the beginning of each week which i found very helpful. The Dietary Analysis assignment was the main big assignment but it was easy. She also offers a bunch of extra credit!

Took her last Fall for Nutr 132. She is super clear on what/when things are due. Never had seen a syllabus as clear cut as her's. I had no confusion on what was expected. There are tasks through the e-book that are due weekly but those were not very difficult. And yes, you do need to purchase the e-book bc that is what the class is based on.
TAKE NUTRITION 132 ONLINE WITH CARSON! Taking the class online was better for time and it was pretty easy. Online may seem scary to some but its easy to navigate and get used to. Weekly easy hw assignments. TONS of extra credit. Replies quick to emails. Take her!
Took her online class with her. On average 2-3 assignments HW and LS (?s you answer while reading) a week and all very easy. Projects are simple and barely any work. Lots of extra credit, and drops your lowest grades in HW and LS. Didn't even need to take the last exam to keep my A. VERY EASY
Wow. Carson is amazing, she made the class so easy to navigate. Fast with grading, email reply. Keep up with due dates and you'll get an A + she sends weekly emails to remind you! There is weekly: chp practice + chp homework. A 200 pt assignment that counts as your final + 3 exams. You must buy the $90 online program. It's worth it! EASY A!!
I highly highly recommend taking Dr. Carson online!! The class is so easy to navigate and she gives so many opportunities for extra credit. If you stay organized and on top of things then you will be guaranteed an A. There are two online assignments to do every week which are easy but time consuming. Make sure to pay attention to due dates!!

It is essential to stay organized and keep track of due dates since it is an online class and almost every week you will have several assignments due. The work load is doable and very easy. There are so many teachers for Nutr132. So, DON'T TAKE THIS ONE! She's not very nice and get ready to do a TON of work for an intro class. I have never come in contact with someone so insensitive to students. Do yourself a favor and take this class with a different professor.

Professor Carson really goes out of her way on checking up on you, multiple emails sent along with extra credit are given in this course. She does 2 papers, HW and LS, 2 exams-open notes(3rd is optional) SO you could say this class is passable. Do your work and most likely you'll get that A.

This class was asynchronous (no zoom meetings). You are given the whole week to complete your assignments and I felt everything was fairly easy given that you complete your readings! The exams were fully multiple choice and you're given a lot of time to complete them. Dr. Carson also provided a huge amount of extra credit, take advantage !!
She has a lot for EC assignments. It's hard to not do well on the assignment and hw because of how the website we use for this class works. There's 3 exams, a project, and a homework and assignment due each week. She was more understanding because of online school and it was easy to set up office hours. I enrolled late and she was so understanding.
She offers office hours but they didn't really help me. Just do the work and you will pass. Don't slack off or you will fall behind.
Dr. Carson actually WANTS everyone to get an A in the class so she offered over 100+ points of extra credit. Once you reach that A, you're exempt from doing any more exams and assignments the rest of the semester. Homework was due every Monday and Friday but they're very easy.
The professor grants MANY opportunities for extra credit for which I am very grateful for! She also had a final, which was a project, due on the fifth week, so we basically got that out of the way early in the semester.
EASIEST CLASS I HAVE EVER TAKEN! Sometimes i would even forget i was enrolled in the class. Once you get that A, you are no longer required to do any work so the sooner you finish your work, the sooner you'll get this class over with. All the work for this class is very doable. Every HW assignment should take about 30 min. -1hr. Highly recommend!
This is the rudest, and worst professor I have ever had in my 3 years of long beach. I was screamed at by her in office hours which was very inappropriate and made me feel horrible. She assigns so much BS homework that no one cares about. She is also a tough grader and has little to no consideration for her students. Take a different professor,
An easy online course if you need the credit, just make sure to do your assignments on time. The only downside is she is VERY rude to her students, I've never seen so much attitude from a professor just by asking a simple question. And don't ask her for feedback unless you want your intelligence belittled.
This class was pretty easy, do your work and you will get an A. Theres 3 exams and one final project in the beginning of the semester that isn't too hard. If you email her she emails back pretty quickly and gives good answers back.
This class is as free as a Costco Sample. Super easy, I recommend taking as a 6th class if your taking 5. Took it online and asynchronous. So much extra credit. Work ahead and its a piece of cake. Impossible to fail.
Super easy asynchronous course for the life sciences GE requirement. Never even had to contact her as she laid everything out very clearly and made the course easy to do. Very easy to pace and keep up with.
This class is okay but the homework and assignments were very tedious. She wasn't clear on one assignment which made it frustrating because it was worth a lot. I contacted her once and she didn't really help me with my problem so I had to figure it out myself. The class was still easy so I would recommend especially since its asynchronous.

Overall easy class I took this asynchronous so never met. Everything is online easy hw that takes a few mins just skim through TB (D1DA) but there is 2-4 hws every week. Lots of extra credit opportunities so take advantage. I finished some work early and met A+ grade so I didnt have to take the last exam. Nutrition project that takes a while so do.

Took asynchronous. She lays out expectations clearly and leaves good feedback. Passive-aggressive on email for no reason. Submitted an assignment fully & on time: she gave me no credit so I emailed her and quoted the rubric. She was rude. She asked me how one is supposed to read if there's just a link to a pdf. I don't know Di...probably by tapping on the link as one who is familiar with technology does.
She is very passive aggressive over email, so be very particular when you email her. Make sure you include every possible detail in your question, I find that to really change how she responds. Overall, very easy class and lots of extra credit opportunities, so it shouldn't be too hard to manage.
I had no problems with Dr. Carson. Others are saying she's aggressive over email, but I've never needed to email her personally. For an asynch class, this was an easy class. Two McGraw Hill assignments a week and an occasional project every so often. Two exams, but she gives plenty of extra credit opportunities.
Dr. Carson was an amazing professor; her assignments were beyond easy, if anything, just a little busy work. She offers a lot of credit as well. I would definitely recommend her to anyone trying to fulfill their GE's. People seem not to like her tone in emails, but I had no reason to email her for anything.
Took it as online course and was really easy. Just be aware to not forget about the assignments in this class!! Good thing is though you're able to do almost all the assignments in one go as they're not locked. 3 exams(open note), one big project that's confusing so go to office hours for that but overall was a easy online course!
The class itself is a very easy A but the professor is so rude. Very condescending and disrespectful to students.
took this course online and was very easy. take this class for an easy A. all assignments are open note and rlly easy. we have one huge project that she grades rlly hard on but she offered alot of extra credit which helped me stay at an A all semester. hw was not as time consuming which was rlly helpful, she offers alot of office hours/ workshops
The class is asynchronous so if you have decent work ethic, you can pass without stressing. The assignments are pretty simple, there's one major project that counts as the final but it's due pretty early in the semester. As for the professor, I did not contact her once, hence the rating but some of her emails do come off pretty passive aggressive.
