Very boring lectures, basically reciting the power points. Mandatory lectures. Wouldnt take this class if it wasnt mandatory for my major. Everybody shows up to do their own thing
Super boring lectures. Have to do a lot of studying to do well on the exams. Claims the learning objectives are what will be on the exam which was totally false. Really need to attend class to get a good grade.
Definitely one of the worse professors I've ever had. Literally reads all lecture material off the slide in her monotone voice and doesn't add much other information. Also typing this 2 days before the (OPTIONAL) final and don't even know where my grade stands because she doesn't update grades, answer emails, and her syllabus scale is incorrect!!
All of the information is in the slides, she takes attendance from clickers. I personally didn't enjoy the class but it wasn't too challenging. I'd still recommend her class.
She is mediocre at best and literally just reads from the power points. I came to lecture just because the clicker's counted. If you put in the busy work you'll be fine.
Don't recommend at all. We haven't even taken our first exam yet and I'm ready to off myself. Her voice is so monotoned and its hard to grasp information. She reads everything off slides so its hard to learn. If it weren't for attendance I wouldn't be here.
Do Not Recommend! Horrible Professor, class is extremely boring and consists of her reading everything off the slides and not further explaining anything. The only reason I come to class is for the clicker points. Have to a lot of studying for exams to do well. A lot of outside reading and videos. If this class isnt required I would not take it.
SOoooo monotone and reads off the slides, the only reason to go to lectures is because of clicker points. If you do the objectives (& look for quizlets) you will do fine. Lectures are just SOO boring but go so you can get the points. The note outlines are alright but the objectives are very useful and more similar to the exams.
There have been multiple assignments that have not been graded yet so students are unsure of their grades. Also is monotoned and reads directly off the slides while facing away over half of the time. Easily the worst professor I have ever had. Only show up for the clickers and 90% of the class watches Netflix.
Worst prof I've had EVER. Monotone, reads off the slides only, easily the worst lecturer I've ever seen. But worse, nothing ever gets graded on time. End of the year here and I don't even know all my grades. It's easy but so much work and full of disorganized people. I wish I never had to attend the lectures but clickers. Absolutely miserable class
We have done over twenty assignments and I probably only have 3 things in the grade book. The final is next week and not a single student knows where their grade stands, that is unacceptable. She is a horrid lecturer and reads off the powerpoint the entire time. If there was not clicker attendance no one would be in the room.
Dr. Ekstrom was one of the worst professors I've had. She's a nice woman and clearly educated in her studies, but she gives the most boring lectures. She shows no passion, no change in tone, and doesn't seek any opinions from students. The class content was okay, and the homework/exam load was reasonable, but her teaching made the class unbearable.
She is not enthusiastic at all and has a super monotone voice. She just reads the slides word for word. If it wasn't for the clickers being worth points, no one would show up. Everyone just works on other class work or watched Netflix. Boring professor and horrible at teaching the material.

There is literally no reason for her to be employed by the college. Worst lectures ever. Reads directly from the PowerPoint and does not face the class half the time. Clickers each class for attendance but if there were no points given for that, no one would be attending them. Everyone shows up and does their own thing. AVOID AT ALL COSTS!!!
Theres iclicker points but she allows 6 absences. I thought the assignments were pretty easy and for the online quizzes you can just google the questions and find the answers easily. She tells you exactly whats on the exam and overall the class was easy HOWEVER her lectures are extremely hard to sit thru she doesnt know how to teach.
Her lectures are there literally to just waste an hour and a half of your life. reads word for word from slides, without even facing the class half the time. everyone just comes for the iclicker points and does their own hw or watches netflix. just study quizlet for exams and youre good
We have our first exam this week and I have absolutely no idea whats going. Im a 4.0 student and have averaged a 98% in all of my classes combined. However, this is one of the worst classes Ive ever had in my life and professor Ekstrom is super boring! Im going to have to pull 3 all nighters in a row if I even want a chance of passing this exam
Crazy obsessed with nutrition, all she does is lecture and she is less than helpful to prepare you for the exams, very oblivious that everyone is doing poorly, makes TAs do all the work and run review sessions and they also don't really know what to do. homework is manageable, exams are very hard
Would be a really interesting class except Dr. Ekstrom is hands down the worst professor I have ever had. Her lecture slides are a mess and she NEVER posts slides or grades in a timely manner which makes taking this course online extremely difficult and stressful. Please save your sanity and take this class with a different professor.
The exams in this class are difficult. They are 50 questions, but each question is worth 4 points making it challenging to get an A. The material is long and tedious. I do not recommend taking the online section because it is hard to keep up with and learn the material.
Lecture was SO boring she put everyone to sleep. Don't buy the book. I only took one exam in person and there was so much information and memorization of things needed. One exam is dropped out of the 4. There are few opportunities for EC. Don't take her for an elective SOO much work and memorization needed
I took this class online which I kind of regret beacuse I dont ever taken online classes so it was hard to keep up but if your good at time managing then you could try online class cuz I heard her lecture is boring but I feel like it will keep you on top of studing at least it would for me Her exam are hard and one gets dropped outof4:60% ofurgrade
No idea how this is an intro class. It is by far the hardest class I have taken at MSU. They accepted over 900 kids to take the class, 60 different groups and 8 different TA's none of which really know what's going on either. The amount of information you need to memorize is nearly impossible and the exams are 60 questions with a 60 min time limit.
In my four years attending a university, I have never had a professor as awful as this one. She ignores student questions. Her exams are impossible, even if you are a good student. She posts incomplete notes. Her feedback time for grades is ridiculous. Please, for your own mental health, avoid this professor.
Terrible professor. This is the worst intro class I have experienced. Constantly felt like there was nothing I could do to help my grade because the exams seemed to be completely different from learning material. Course was so disorganized. Refused to listen to students. Help yourself, do not take.
Would not recommend to anyone. A 100 level class should NEVER have the amount of work she assigns, and during a pandemic this was almost impossible and felt like 4 classes in one, on top of taking OTHER classes. Horrible communication, unclear test material but STRICTLY graded and no notes allowed. Treats a 150 level class like its a 400 level.
Good class, lots of reading. Don't buy the textbook right away, instead look into MSU's affordable textbook program where she has set it up for you to rent online for free. The class is pretty challenging due to volume of content, but there are many opportunities for extra credit. Very applicable to real life, take the honors option if you need it!
She seems to put little time into actually helping her students succeed. It's hard to get a decent grade in this class due to the amount of memorization.
She is terrible. She showed no interest in her students or their success and offered little support.
Grades weighted very heavily by exams and the Dietary Assessment assignment. Nothing prepares you for the exams especially right now on lockdown browser. Problem sets are completely unlike the exams. Grade turnaround is absolutely horrible. Did not receive grades for DAA2 or Exam 2 until the last week of classes which is over 1/4 of the grade alone
Although I managed to get a good grade in this class, I absolutely do not recommend Dr. Ekstrom to anyone! The class format is completely scattered, there is an unreasonable amount of info to memorize for tests, feedback and grades take absolutely forever, and the prof is not easily accessible outside of class. Be prepared for dense course material

Way too much content to fully grasp, this entry level course is not entry level. Some pointless activities and exams are terribly specific and exam reviews do know help at all.
This class is extremely dense in terms of material we’re expected to learn in the proper amount of time. Online lectures are scripted, unrealistic homework expectation, and she doesn’t bother to check that the proper amount of exams are printed by the time of the scheduled exam.
This is the worst class I’ve ever taken. It was all online asynchronous, but we were required to take the exams in person after teaching ourself all of the content from the dense book. Far, far too much memorization for an intro class. Please save yourself and do not take this class.
Widely considered one of the worst profs at msu. Insanely difficult for a 100 level course. She’s incompetent which forces you to teach yourself the material. Tests are crazy compared to coursework & everyone does poorly. Not sure how she hasn’t realized that a low class average is a reflection of her lack of teaching skills.
Worst professor I've ever had. Showed up for exam and she didn't make enough copies, so she told us we could take an online option (lockdown and proctored) or wait 15 minutes. Little did I know that 15 minutes meant an hour. Her exams are nothing like the hw & expects you to memorize everything, without any instruction because it's an asynch class.
She only comes around when its tome for in person classes, even though the class is all online. She is very unprepared and I feel like I am teaching myself everything. This is supposed to be an introduction course, but there is way more info and not much instruction. I would not take a class with this professor again.
Her class is definitely tough, especially because it's asynchronous, but not impossible. She hosts weekly review sessions for questions and tries to facilitate as much interaction as possible. There was an issue with not printing enough tests, but she seemed genuinely concerned and people make mistakes. Doesn't makes her an awful prof.
Not my favorite professor. Showed up to an exam with not enough exams for the number of students and gave half of the students an option to take the exam online. This class is completely asynchronous, and you are expected to memorize the material with in-person, closed book exams. Shows up unprepared and does not teach whatsoever. Do not recommend!
There’s is an overwhelming amount of information to be learned for each exam. It’s all just memorization and you basically teach the course to yourself. If you study the shared learning objectives you should do decent on exams.

Don't take this class unless you have to. It is so much work, luckily there is a good amount of extra credit but still exams are so difficult for no reason, but a lot of the material is all memorization and there is just so much to do. The professor doesn't do any of the lectures, it is someone else. I don't recommend it at all.
Had to take HNF 150 for my health promotion miner and can confidently say I would have not 4.0'd the class without previously taking biology, physiology, and organic chemistry. This is a 400-500 level class disguised as an intro class. Dr Ekstrom has a horrible approach to teaching, which involves reading off a script instead of actively engaging.
Throughout the semester not one of the online lectures was made by her and reaching her by email was very difficult. I once tried to contact her about an assignment I was having trouble opening and I never received a response back so I had to figure it out myself. The exams weren't too bad but there was a lot of busy work which was very annoying.
This class is required for my major otherwise I would have dropped it. Was an online asynchronous class, so basically taught myself everything and had to do in person exams. Review sessions put on her were never helpful, I relied on other classmates to prepare myself for the exams. \
Dr Ekstrom was very unreachable and the class was extremely difficult & the assignments for the week were just over the top. She was rude in email exchanges and not very willing to work with students at all. The course was supposed to be asynchronous but exams were in person. This class should be a MUCH higher level,students had to teach themselves
Hard class in general. Don't take the class unless it's the last professor available. This class has tons of work to be an introductory class and is also very test-heavy. You can get a 100% on all homework and still end up with a C. She once forgot to print our exams out resulting in half the class going home in the middle of the exam.
The content of this course was very very tough for a 100 level class, but if you study hard you will succeed. Professor Ekstrom hosted review sessions before every exam which was helpful. She was also very helpful- I was sick and unable to come in person to one of the exams so she gave me an online version.
I don't recommend taking this class with this professor. I have no background in this kind of field but needed to fulfill a STEM credit. The load of information is TOUGH. There is a lot of material, assignments, and the exams are extremely hard. She also was not very accommodating after the recent tragedy.
Do not take a class with her, ever. Worst professor I have had, by far and large. Does not reply to emails, requires in person exam for an online course, course work is FAR too much for one exam, as well as for a 100 level class, very insensitive tot student needs. How you getting paid to teach an online class but have your TA's doing everything and can't respond to emails?! Very difficult class with tons of information to memorize. The professor does not respond to emails, the workload is insane for a 100-level intro course, and the exam questions came out of nowhere. The in-person exams were just so much information to remember it almost seemed impossible to get above a 60. There is tons of extra credit offered.

Course load was extreme for a 100 level class. Definitely a weeder class for KIN/Nursing - would not take if you're looking for a STEM credit. Did not feel as if prof saw students as actual people.
In person exams for asynch class. Wasn't accommodating exam wise after tragedy. Uses a website for questions but doesn't respond half of the time, avoids certain posts, and doesn't respond to email. Has TA's do everything for her. Class is full of busy work. If you have to take this class, do it w/ someone else or at a CC. Absolute waste of time :/

As a student, I feel let down and unsupported by this professor, and I can only imagine how many other students may have felt the same way. It's unacceptable for educators to not prioritize their students' needs and create a negative learning experience. She does not deserve the title of being a professor! Truly disappointed at her teaching method
Took this online with her, she uses Dr.Alaimo's pre-recorded lectures from 2020, not even her own lectures. Extreme course load for a 100 level class, I spent more time studying vitamins than I did trying to learn material in my own major. Clearly does not care about you, I would take this at CC or with Dr.Alaimo.
Dr. Ekstrom is not accessible outside of class. You send an email? You will not hear back. There are very few accommodations for anything. The lectures are useless. Lots of busywork. Exams are in person and heavy. I regret taking this class, and that is primarily due to the professor. This should not be labeled an intro/100 level class.
I know many reviews make HNF150 sound daunting, and while I don't think the professor is very involved in the class, it's doable. The first exam is a bit of a wake-up call as to how much information is required to be memorized, but chances are if this is a required class for you, that's something you'll have to get good at. Start studying early!

I know this was an online class, but 6 hours of work a week is unobtainable. I had over 300 flashcards to memorize for every exam (she doesn't give a study guide, just learning objectives). Lectures are broken up, and not concise. D2L was not organized at all. For multiple weeks we had to watch a documentary on top of lectures. Doesn't answer email
When I first saw these reviews I promised myself i would see if she's really this bad and come back and write a true review. Everyone is correct. If you plan to take this don't panic it is possible to do well it is just an insane amount of work for a 100 lvl class. Exams cover FAR too much content, she doesn't make the lectures, or grade anything.
I would not wish this class upon anyone. Do not take this class. I got 100% on everything and did the class average on all exams but ended up with such a low grade. I wish she would have specified that the extra credit isn't really EXTRA more just a way to get a DECENT grade.
Do not take this class, this class is way too much work for a 100 level class, and it's online so its easy to forget about/not care for. This class is not worth it.
There are 3 exams, plus an option final to replace your lowest exam grade. We were provided 4 group study guides for each exam that had over 60 learning objectives and hundreds of terms (exams only had 50 questions). I believe in having to work for a grade, but this class had way too much work for its level. However, a 4.0 is achievable.
I think a lot of the negative reviews on here are more so about the class and not so much for the professor. The class is difficult, however a 4.0 is very achievable if you work for it. The only con is that she doesn't respond to emails very quickly. If you do all the homework and study you can easily get a 4.0
This class is a 3 credit course and was by far my hardest do not take this professor.
Weekly or biweekly quizzes and discussion posts. Professor is slow to respond to emails, don't expect quick replies. 3.5 or 4.0 is possible with hard studying, exams require memorizing 100+ terms, only 50 are on exam. If you have other demanding courses, the workload can be overwhelming. Book isnt helpful. Time management is key.
The ratings on here aren't as bad as it actually is. The exams aren't that hard and they do an exam review before every exam which is suuuper helpful because it covers everything that's gonna be in the exam. There are lots of notes every week but honestly, I could pass the exams by just going to the exam review and making a quizlet from it.
super hard for a 100 level, if ur not a science major it can be very challenging. exams are 20% 50 mc. discussion posts are long and require so much time. this class can be overwhelming

This class was fine, pretty standard for an online class. The tests are a bit hard to prepare for because there are so many terms and things to remember. DONT BUY THE TEXTBOOK! I never bought it and it has had no impact on me. The grad TA for the class was extremely rude but that's not her fault so not part of the rating. Overall, just an ok class.

this class is very hard and it requires alot of studying, however a 3.5 is possible if u do all the work and esp the extra credit work which is literally doing the hws before the due dates. do not buy the textbook not needed. they take forever to grade things but thats bcs its a huge class. also exams are in person!
don't take this class as an elective. text book is unnecessary, quiz every week. doesn't answer emails. a lot of studying involved for it to be considered an elective.
Dr. Ekstrom will not respond to your emails, ever. I think she mainly has her TA's do a lot of the work. Don't get me wrong, she's a nice person. However, she expects you to study 100 vocab works and more than 50 learning objectives for just one exam, not even the final.
I will never be taking one of her classes again. This class has made me hate nutrition more than I ever thought was possible. She doesn't do any of her actual work, the TAs do everything. Exams are actually INSANE. Never received full credit on my discussion posts because she had to press ONE BUTTON. Save yourself the time and effort. Awful class.

This class was beyond frustrating. There's a huge lack of communication, and dates for exams and such were often inconsistent. If you want to 4.0 the class, you NEED to do all the video lectures, assignments, extra credit, and GO TO THE EXAM REVIEWS AND USE THE PRACTICE EXAMS! If you can, save yourself and take the class in person another semester.
I had professor Jennifer Lynn Ekstrom during the spring semester of 2025. Her lectures were insanely long, her attitude wasn't the best, and she was extremely nitpicky with the grading. She judged what students ate. She got mad when I mentioned my disordered eating and that "I didn't use the resources provided" and I couldn't because of the wait.
