She's a good teacher. She explains things concisely. Her exams can be pretty hard but if you study the notes well you'll pass
Her class is alright. Most of the time it is really boring. She talks really fast and expect you to take a lot of notes. If you dont take notes you will fail her exams. EXAMS ARE HARD!! text book readings are long and has a lot of information you HAVE to remember. All you do is go in her class and take notes, NOTHING ELSE!

Great class! There was lots of stuff but she made it interesting and explains things well, exams were pretty hard but if you review you can do well. Didn't really use the book, everything on tests she covers in lecture. I would take another class from her, I thought she was really good.
Very good class. Tests are hard but if you've done the work, she's a fair marker. Explanations are very clear and she is very helpful.

She is interested in what she teaches. Explains everything clearly. You just really have to study well for the tests ( multiple choice/ short answer/essay)

Awesome professor. She relates to the students well and makes plenty of time for you to talk with her & clarify questions you may have. She's very encouraging as well toward her students. The exams are difficult so make sure to study hard but if you go to class and pay attention you will get the idea of what she wants. Studying is key in this class
Great professor! She is fun, helpful & willing to answer questions after class. She really wants her students to pass, although her class is pretty difficult. You do have to remember details of the lectures, the first exam was the hardest. I recommend her class, as long as you don't plan on slacking off. But putting in hard work is so worth it!
Professor Knoblaugh is very clear in her lectures so idk why everyone said her class was difficult. Students who says this class was difficult were probably the students who were always on fb or playing games on their laptops when she was lecturing. Just listen when she's lecturing and maybe 10-20 mins of studying 2-3 times/week can get an A
She is a brilliant teacher. She is a teacher that knows her information and can provide it in the most clarity possible. If you pay attention to the lectures and read the chapters then you are able to get the best grade possible. The first midterm is difficult though. She is helpful when you put forth the effort.
Honestly hands down one if my favorite teachers at state. She's very clear on what things you are suppose to know for the exams. Exams are not too bad, all I studied off of we're her notes about 2 days before and got B's on them. Take thorough notes, listen to what she tell you, do the reviews she hands out, make flashcards and you'll be fine.
Very interesting class. You learn a lot about nutrition. Her tests are a bit hard since there's so much info on there (MC and written). The final wasn't as bad as the midterms. Listen to lectures and take notes on what she says is the best way to prepare for the exams.
Taking her summer course at De Anza--she's really thorough w/ lecture notes, and more than willing to clear up any questions before, during, and after class. If you just have initiative and actually do the work and study an hour before class for her exams, you should be solid.
I love that she makes all her points very clear. She'll never beat around the bush or ramble excessively. She teaches with a very straightforward approach and is never ambiguous. She emails the slides to you and goes over them more in-depth during class so you should still take notes. As long as you study the notes and pay attention you'll do fine.
Fantastic teacher. I avoid any classes that are science, math or health related. I had to take nutrition. She was very concise & clear. Most importantly, she allowed opportunity for you to receive clarification if needed. I like the way she gave prep questions in class before an exam. It really did help. PPTs were clear cut.
I take her class this summer and I feel everything goes well. No textbook needed for the summer. She provides lecture slides and the lecture slides are pretty straight forward. She is nice, patient, and humorous. She is also flexible, she changed a lot of assignments into group-work so that we can finish them in class. Highly recommend.
Overall, she's a great prof and always willing to help. Her lectures are straightforward, to the point, and answers any questions you have. Tests are kind of hard but if you study, you should get a high grade (you can't just show up and expect to do well on them). Only thing I wish she did was actually move during lectures, she just stands there.
This class had more assignments (book questions, assignments on articles, debate paper, group projects) than my major classes. There were too many assignments due in short durations. We also had to volunteer 10 hours not even 5 and write a long extensive journal/entry paper on it. It was too much work for a simple nutrition class. Worst class taken
Everyday in class we had a lecture. All of the powerpoint slides to her lectures are online. Go to class if you want a better understanding on what you're learning, other than that its not really necessary. There aren't many assignments and the ones we did have are not hard at all.
She gives powerpoints online but there are blanks throughout the powerpoints and you can fill them when she lectures in class. She lectures through the powerpoints online but with the blanks filled and she goes in depth about the topic. Tests are a bit hard but if you study then you will probably get a good grade. She answers any questions you got.
Really cool professor. Does her best to help those who need it. This class was really interesting. Her assignments aren't hard at all, and some are in class with a partner. She is one of my favorite professors.
This class was pretty easy. The midterm and final were super simple. Midterm 50 questions multiple choice and final 59 questions multiple choice. We only had to write 1 paper for our service learning assignment, which is 12 hours of community service at a local food bank. She does assign assignments throughout the course, but nothing difficult.
Really funny and really great at lectures. All the material is easily available and she is willing to help out anyone with questions. Would definitely recommend her as a teacher.
The class focuses more on exams for your grade so if you don't do well on one of them, your grade will probably drop close to two letter grades. We also had a couple of written assignments which were fairly easy. You must attend class to see the PPT slides (highly recommend). She is willing to help when you don't understand something in class.
For the NUFS 9 course, it is really interesting but can be difficult. She is very knowledgeable in this subject, therefore if you have any questions at all do not hesitate to ask. Lectures everyday, so make sure to take notes! If you study, you will pass. Makes it really easy to calculate your grade, because it is only graded upon a few things.
Knoblaugh provides all her lecture materials on canvas. Her lectures are great and goes over the material well. I learned a lot from her. There are a lot of assignments along with the exams. She does provide activities in class that helps understand the material. Friendly, caring, and passionate about nutrition.
The class itself is difficult (I'm not a nufs major. I just took it to fill a ge area). This teacher is awesome and super sweet. She always wants to help. Every day is her going through the powerpoint which is online. I would still recommend going to every class though because she says important things. Don't buy the textbook just the access code!
This was one of my favorites GE courses I've taken so far. New and interesting content is always given. She is always able to further explain a concept if you need to, and uses real life situations for better understanding as well. However, she is a harsh grader. Make sure you have exactly what she wants!!!

I wish all my professors taught like her. Honestly I only took the class because I was kind of interested and needed fulfill credits, but she made everything so easy to understand. You don't have to show up to class, but I think taking notes would help on tests. As long as you keep up with assignments and whatnot you'll do fine.
The exam is very strict. It will never give you as loose time as other professors do. It's very tense. And the content of the exam is very difficult. It is a disaster for international students and those whose mother tongue is not English to choose her course, especially those with poor language foundation.
Why make this class harder than it has to be? Hour-long videos and 50 questions on the exam with only 40 mins to take it. What a huge waste of time, everyone in these classes are only taking it because they have to. I have other exams related to my career that I need to study for, but nope have to waste my time with this class!

Her class makes me want to quit school... Why are her test so specific and so long?!?!?! She gave us a study guide that took me almost 4 hours and more then have the questions on the test were different!!
I initially picked this class because nutrition seemed like an interesting and easy enough course for my area v. Unfortunately, it seems like more of a writing class more than anything else. A lot of useless videos and lengthy assignments to keep the students busy which takes away from actual stuff we could be learning.

Bruh 3000 words for a paper thats only worth 100 points because we couldnt volunteer 12 hours at a soup kitchen due to covid.... How did SJSU allow this curriculum?
I turned in my paper early and a week later she modifies the rubric to increase the word count and tells us to modify our paper to fit the new rubric wtfff beyond done with this class
This class was easy, there was a lot of work that's just "busy work" but in my opinion it was fairly easy and pretty interesting. Modules were really clear, maybe 2-3 quizzes/paper a week. I just hated the community service learning project, I feel that it was released so late with so little time to do all of the prompts.

Karen is a great professor and definitely knows what she's talking about! It's really important to read the textbook and take notes, then use her lecture powerpoints to supplement your notes with extra info. Tests are VERY difficult. Don't just study the study guide because MOST of the test is NOT on the study guide!
Professor Knoblaugh is a great professor but strict. She doesn't give any time extensions on assignments unless you have a very good reason to not completing them (ex- website crashes). The first and last exam EASY even if you lightly study. The second exam HARD. Legit the only one needed to study for. Also one big nutrition project. Easy quizzes.
this class was so much work and her grading criteria was not really clear on the project. Lectures are super long and hard to keep track of what you need to know on exams and such. exams are really hard and its closed notes with a lockdown browser. heavy lectures and also about 50 textbook questions due per chapter as homework
Shes a nice Professor (and the class is very interesting) but she completely ignores student emails. In an asynchronous class, this is really the only way to reach out to a professor so one would think it would be a priority to reply
Every week is a new discussion, you read many articles and answer questions. You have three papers throughout the entire sem along with the midterm and final. Do not take her. She takes very long to grade simple things. She does not provide feedback that helps. Never lets you make anything up. Very discouraging in emails.
I have other core classes but spent around the same amount of time for this class. I worked hard and did well on the weekly quizzes and assignments though. The class work load is a lot for an elective. If you work hard and study for the assignments and quizzes, you'll be fine.
I took this TBA with the thought that it would be flexible towards your schedule; I was dead wrong. I genuinely think she is lazy, because in our exam review she writes out, "Too much to write refer to notes." Even when you plan out your 3 days for the exam, if your wifi goes out when you decide to take it on the last day, it is not an excuse.

very old school teaching material, instead of learning knowledge I learned how to finish a huge amount of homework in a short amount of time. First two weeks in I already wanna drop but had no choice cuz I was about to graduate.
Karen is a nice lady, but trust this class had some work. The majority of it was diet study which you work on throughout the semester. She gives clear guidelines so if you follow them, you'll pass. This class also uses McGraw Hill so prepare for that also.
Weekly lectures and McGraw Hill homework every week. Two midterms and a non-cumulative final. One diet study project that is done in parts throughout the semester.

do not take this class. way too much homework for a simple GE, two exams and one final exam. exams are a minimum of 50 questions and it's online on zoom with the lockdown browser, every one cheats. most of the homework is VERY long and boring, recorded lectures are helpful but it's the exact same thing as textbook
The classes finals and midterms are to be taken on Zoom, with her carefully watching you. They are also only available to take during the 2 times she selects (which are usually inconvenient + odd times). This makes her course go against asynchronous course protocols. Also, midterm and final are graded heavily, with little work to help. Don't take.
If you're interested in learning about Nutrition Science, DO NOT TAKE Professor Knoblaugh. She is not a teacher at all. She is incredibly rude and belittles you when you ask a question for clarification. Do not expect her to encourage you to learn. She's only good at making you feel bad for wanting to succeed in her class.

Assigned textbook readings throughout the semester. Lectures videos are the same as what you read from the textbook. This is also a writing class so expect to write a lot. 2 midterms and 1 final that are heavily weighted on your grade and is very tense. Only way to reach out is during her office hours which she is rude and does not actually teach.
Repetitive homework assignments that repeat the question multiple times for no reason. Also, even if its marked as an asynchronous class, all midterms and the final will be taken over a zoom meeting with a lockdown browser. Not worth taking for how boring the course is. You're better off with a different GE.
Absolute worst professor. Took an asynchronous class but she made us use zoom with lockdown browser for exams on specific dates she chose. Assignments are easy but exams are difficult and weighted heavy. Does not help out students at all. Will accuse you of cheating and end your exam. Beware.
worst professor ever, all midterms and finals are incredibly difficult and only can be taken on two times which are very inconvenient, calls you out for cheating during midterms and exams for no reason at all. exams are heavily weighted. just don't take it, it's boring and way too much work for a GE
this class is very test-heavy with weekly homework assignments on mcgraw hill. the hw wasn't that bad if you spaced out your time tho. tests are proctored on zoom with lockdown browser and she'll end ur exam if she suspects u cheating. i would advise to find another prof for this class if u can!
She's inconsiderate and inflexible. Study and read everything to get an A. Too much energy wasted on a GE.
i mean this in the most respectful way: professor is super inconsiderate and blatantly rude. she is praying on everyone's downfall. makes everything so hard for something so simple. shawty needs a little love in her life to make her happy.

i DO NOT recommend Karen. She's a nice professor and all but she doesn't believe in extra credit and most of her grade SOLELY relies on the tests. There are some assignments but it doesn't help much if you're trying to boost your grade. You have to join the zoom (on top of lockdown browser) to take the test, which are very difficult.
nope, if i were to go back in time and not take this professor i 100% would... for a GE and online class the tests are sooo difficult, the averages are crazy low with no curves, extra credit, and some understanding. the material we are taught rarely shows up for the test sometimes and some of the questions i never heard of or seen before.
Please avoid this professor at all costs. She had us take exams on days when it was convenient for her, not for the students. She isn't accommodating and is extremely strict on grading and in general. Also, she makes you attend Zoom meetings for exams and expects cameras on while taking the exam. I got introuble once for reading my questions aloud.
This professor has unclear guidelines, is uncompassionate, not understanding, and is very strict on deadlines. Students have lives outside of class and this professor is not very understanding. She made me cry in class in front of my peers, because of two conflicting notifications she sent out. If you need to take NUFS8, chose any other professor.
Not a fan, take another teacher. Hard GE for no reason. Exams on lockdown browser, which requires camera on. She called a girl out for "cheating" and closed her exam. When I did email for clarifications she was kind to me, make sure you know how to send emails. Honestly not worth, unless you're super into Nutrition, save yourself time and stress.
